    Can substitute light brown sugar for palm sugar.

    The depth of flavor is wonderful, due to the building of a broth, and then the red curry paste, fish sauce. I highly recommend Blue Dragon brand of curry paste and would steer you away from the more common Thai Kitchen brand you will find.
