    Can substitute oregano for Mexican oregano, Parmigiano Reggiano cheese or feta cheese for cotija cheese, and ricotta salata cheese or farmer's cheese for queso blanco.

    Having learned authentic mexican cooking from Rick Bayless youtube videos, i cooked this and it is a good example of an enchilada rojas, using good chili technique to make the sauce. The cheese can be substituted but keep it mexican oregano and mexican canela cinnamon for authentic results, it does matter.
