Today I made this chicken salad. The recipe makes very clear that adding some wine is an essential part of the salad, but it is neither in the title (unless you count "the secret to a" as such) nor is it added in enough quantity to be counted as a main ingredient on that count. Yet I feel it should be listed in the ingredient list, as it is both important and unexpected. 


What are your thoughts on this?

Wester: I read that recipe as "leftover white wine" - (an oxymoron if ever) ... but, given  its less than the metric required to classify as an ingredient (250ml) .. isn't EYB's assumption that we all have white wine & red wine in our fridges!? I know I do - but then I am in Australia and its almost compulsory!

We have to index ingredients that are in the title even if they fall below the quantities that are deemed to be store-cupboard ingredients and a secret ingredient (the wine) is referred to in the title, so I say it probably should be included!

Not a problem - added white wine to the ingredients list.

For those of us who don't use alcohol for religious reasons (possibly billions worldwide), it would be helpful to list any wine in the ingredients rather than categorizing as store cupboard ingredients.

MarciK - it's very easy to substitute another ingredient for wine in a recipe (unless wine is the main ingredient) - grape juice or stock are often recommended. Depending on the type of wine called for in a recipe other fruit juices may be more appropriate e.g. apple, pomegranate, lemon, etc.
