Menu required for husband's birthday   Go to last post Go to last unread

It's my husband's birthday soon and I would like to cook us a 6 course meal. We've had a tough 2 years as he's chronically ill. I want to cook something special. 


Could you please suggest what I can cook? I normally cook extravagant meals on a daily basis so it needs to be extra spectacular.

I am sorry your husband has been sick.  What are his favorite foods?  I know what my husband's favorites are and I make those for his special days.  He is easy to please because it's steaks, pizzas, burgers and maguro heavy sashimi.

If it is just you cooking and serving, you'll definitely want to have many of the courses made ahead -- or prepared "tableside". If you often do extravagant meals, you probably already know the drill -- but if you are doing "fancy", that takes even more forethought!


I second the question about what kinds of foods would be favorites, and also ask where you are located (what season is it? what is fresh and local there?).


For me, in sultry South Carolina, I've got Frozen Lemon Cream Sandwiches on my mind. (There are at least four recipes in the EYB library with this name, and two--likely identical--are online. Lemon, creme fraiche, frozen, made ahead of course .... sounds perfect to me!

I read a good trick for such occasions, which is to take a menu from a restaurant (or two) your husband loves, and ask him to choose what he wants. In advance of course, to give you plenty of time to source the ingredients and look up recipes!

Let us know what the final menu is .. with photos! Whatever you decide make sure to relax and enjoy the moment, without stressing over the food!


I'd be going for easy do ahead stylish items: I always start with dessert first when planning - you're listed as being in Oz, so its coolish and winter fruit & veg in season: 


 Cheat's blinis with jamon and figs (a nice sparkling wine)


Swede gnocchi with crispy sage (or a parisian gnocchi) with a nice sauvignon blanc or unwooded chardonnay)


Sumac baked salmon  (and a nice wooded Chardonnay)


Champagne sorbet


Beef fillet stuffed with yabbies, hollandaise sce, a great Shiraz


Sparkling wine-poached pears, hazelnut praline and hot chocolate sauce (sauternes)


COffee!

I would follow the menu order of a high end restaurant. I looked through your bookshelves to get an idea of what you have. I also have The Country Cooking of France, and I think that’s a fantastic place to start for a special meal. I’d do something like this:

Amuse-Bouche from your cookbook of this name

Light creamy soup

Chicken in half-mourning (Poularde en demi-deuil) from The Country Cooking of France
Vegetable dish from The Country Cooking of France
Gougeres

Creme Brûlée with a tuile garnish

Little bite sized eclairs
