Cherry Blossom Pickle?   Go to last post Go to last unread

I hope one of our asian cooking experts can help me with this. While visiting Kyoto Japan, we ate one evening at a little place on Pontocho Alley in the Gion district, that was a cross between a regular restaurant and an Izakaya place (bar with food snacks). We had Karaage (fried) chicken with Cherry Blossom Pickle Tartar sauce. It was utterly amazing! We really wished we’d found it sooner than our last night, because we would have gone back.

Are Cherry Blossom Pickles a thing I can find outside of Japan? Amazon seems to have salted Cherry Blossoms and Cherry Blossom powder available. But I’m not sure the first is the right thing.

So… couple of questions… Are Cherry Blossom Pickles a thing? Do they impart flavor or is it entirely a beautiful color thing? Are they available in the US or should I try to snag some before leaving Japan?

Usually sakura no tsukemono ie cherry blossom (flavored with salted cherry blossoms) pickles are ubiquitous esp in Kyoto and other parts of Japan.  Things like daikon, Japanese turnips (can be found in Japanese markets), cucumbers, shallots, small pearl onions, cabbage etc are pickled together with salted cherry blossoms in vinegared style pickles.  Some are quick pickles like same day eating. Japan has countless pickle styles as pickling was the safest style of vegetable consumption until late 50's.  


Japanese tend to use their own pickles in season (now cherry blossom) to make tartar sauce.  You can explore making your own by buying salted cherry blossoms rinsed in water or soaked in water to remove excessive salt and making vinegared style Japanese pickles. Soaking is recommended when making desserts. I like to top my cheesecake with them sometimes or mixed in with cream cheese for sakura flavor and aroma.

Additionally, they may have used minced version of salted cherry blossoms after rinsing or cherry blossom powder for cooking which can be found in Japan. 


Buy while you are in a japan.  You will not regret it.  I do whenever I return.  We bring extra luggage for purchases.

Thank you so much Rinshin! We are in Japan for 4 more days — 3 in Nagano and 1 in Narita (for easy access to airport next day). I will buy Salted Cherry Blossoms before returning home.

I didn’t succeed in finding salted cherry blossoms before leaving Japan, so I will have to buy some off of Amazon.

In Nagano, Starbucks was the best nearby breakfast option, they had a wonderful Cherry Blossom Chiffon cake, decorated with salted cherry blossoms.

next time, walk into any local grocery stores and there should be some.  I picked up mine in Early March. They really do impart beautiful flavor and color.

Rinshin, can you suggest a recipe for the Kyoto Cherry Blossom Tartar Sauce? I didn't find one here on EYB and when I searched Google, it presented this thread as the number one result, LOL. Everything else is travel articles commenting on enjoying the cherry blossom tartar sauce in Kyoto, but no recipes.

Should I just add the chopped cherry blossoms to a Japanese style tartar sauce recipe?

I'm intrigued by this thread: a country I've not yet visited & a food I've not yet tried!  fyretigger - I tried a search for sakura (cherry blossom) and sauces and a few interesting ideas came up - including making your own salted cherry blossoms.. so I thought I'd share that link: click here. I guess if you're trying to replciate that sauce that tantalised your taste buds - you could email the eatery for their recipe.. or keep experimenting! I found a few recipes for  a Japanese tartare sauce and I guess stirring in the salted cherry blossom?  I particularly liked this one

Since I’ve not had tartar sauce flavored with salted cherry blossoms it is going to be a guess based on what is sold in jars as cherry blossom tartar sauce. Ingredient lists Mayonnaise (manufactured in Japan) ie Kewpie, wine vinegar, pickled rakkyo in sweet vinegar, concentrated grape juice, salted cherry blossoms, spices, (some include eggs/apples) Japanese use rakkyo often in their tartar sauce instead of cucumber pickles ie dill or bread and butter types mostly used in the west. Rakkyo is pickled small cocktail onion type pickles popular in Japan and can be found in Japanese markets in jars or plastic bags. Also, chopped eggs are always used there. Depending on color of this tartar sauce, you may need to adjust how many salted blossoms to use. Make sure to rinse the salt because they are very salty. These salted blossoms are extensively used in desserts and with rice for aroma and pink hue. If I can find recipes, I will post.

Attempted to post a photograph of my try at the Cherry Blossom Tartar Sauce, but the photo doesn't show up -- apparently EYB doesn't like iCloud photo library links for some reason, and I have no other place to link the photo from. And I couldn't find a way to delete the post (that's probably a good thing), so this placeholder instead.
