    I made a version of this for Australia Day - it worked pretty good but I think if I had followed the complete recipe it could have been even better. I didn't make the raspberry mousse as I didn't have access to a fridge at the party, I replaced it with a raspberry buttercream. Strong raspberry flavour helped to balance the cake. Also didn't worry about the malibu as I didn't have any to hand. Also replaced the desiccated coconut with moist coconut flakes. The actual cake component and the marshmallow icing were amazing though! I would use the marshmallow icing again for sure, much better than others I have tried to make. Overall a winner.

• Spiced zucchini & pecan cake

    I've made this several times, whenever the zucchini plants are bearing well. Yesterday I found a monster perfect for this recipe. No pecans so I used a mixture of pistachios and almonds. I usually don't make the icing, we are trying to limit our calorie intake after all! This time I baked it in two square 8" tins rather than the 22cm round tin, for a shorter time, so it's more like a slice than a cake. I like it a lot. I do forget very time, however, that for the cake you only need 140gm of nuts, as the rest are decoration for the icing. So as usual I measured and processed too much.
