    This is known as Teen Chow in my house. Although it's not a hifalutin' dish, it hits all the right flavor notes for the kids and is easy enough for week nights. As an added bonus, it makes a large amount which is good for when the teens have a herd of friends over.

    Sophisticated fare this is not, but it’s got nostalgia going for it, and is comfort food for a cold night. I cut the recipe in half (and it still made a ton), left out the dried basil, added some ground cumin, used the chili powder (not optional in my opinion), used whole wheat elbows, and added kernels from one ear of corn. Served with some avocado and sour cream—yum. Would like to try with ground turkey.

    Loved the vodka sauce and pieces of melted mozzarella in this dish. Have lots of leftovers for the week too

    We love this recipe. I sub the saffron for Sazon Goya con azafron, a cheapo's alternative to saffron. I throw one packet in, but you might want to try a half to start out. It calls for many ingredients I have on hand usually. It tastes exotic for a weeknight meal and makes plenty to pack for lunch for the next few days. This is a keeper.
