I used this as a filling for a bombe Alaska and it was the perfectly tart foil against the sweet meringue topping. I was a bit sceptical about the non custard base but it worked beautifully and had a luscious texture even though we forgot the ice cream machine and had to resort to the freeze/beat/freeze method. It would be delicious with any tart curd - lime, passion fruit, blood orange.....
Very nice with crumbled meringue mixed through.
