  • Smothered green beans with new potatoes

      One of my husbands favorite sides, all the ingredients in there are his favorites. I used Yukon gold just dug out from the garden, and pole beans, also from the garden. Only used three slices of bacon because mine were thick cut slices.

      Made this last night, using what I had on hand- subbed in sweet potato for the squash and kale for the spinach. Very yummy!

  • Sauerkraut & sausage casserole

      Quite good. I liked the way the potatoes are incorporated into the dish, the oiled slices are shingled over the top of the sauerkraut, apple and kielbasa mixture, forming a crispy crust for the casserole. I just used a can of sauerkraut, don't know if it measured up to the 21/2 cup called for and I only added about a tablespoon of cider vinegar instead of the 3 called for.
