  • Hoppin' John casserole

      Even as an LSU graduate, this casserole was too spicy for our palates. Definitely substitute andouille sausage for a non-spicy sausage if there is a next time around. But hopefully those black eyed peas bring us good luck in 2023 and the whole thing came together without much fuss.

      Good but a bit blah. Could've used some onion and maybe some interesting seasoning mix. I did add some white wine and that helped. Could pretty easily turn this into a soup with more chicken broth and some cream.
