  • Freeze-ahead roasties

      SO GOOD! I love that a) these could be prepped and frozen in advance so that on the day all you need to do is put them in the oven for an hour, and b) they came out tasting great, with the perfect texture and got lots of compliments from my guests. Make sure not to cut the potatoes too small because they could break up at the stage you have to toss them with flour and fat.

  • Spiced carrot chickpea & almond pilaf

      I had lots of carrots to use up, so made this. It was decent enough, but lacking complexity of flavour. If I made it again, to use up carrots, I'd probably try adding some spices eg cumin, coriander.

  • Winter vegetable pie

      Nothing special, and a little bland even though I swopped the potato topping with sweet potatoes, and I added chopped spring onions to the mash. Has put me off my new year resolution of eating more non-meat dishes. Crumbled vegetable stock cubes into the tomato sauce may make it tastier. Won't be making this again.
