This is a nice option for a winter salad, when pomegranates, but not tomatoes, are in season. It can be tossed together very quickly. I used mixed greens.
Two-thirds cup of buttermilk is too much. This dough came out wet, making it impossible to knead and cut into triangles, so I baked it in a 9-inch square dish. The flavor was fine but I didn’t like it well enough to bother with trying it again and making adjustments to the recipe.
I used only ground beef rather than meatloaf mix and dried parsley rather than fresh. For the oatmeal, put 1/2 cup old-fashioned oats and 1 cup water in microwave at 50% power for 7 minutes, and allow plenty of time for it to cool before adding it to the meat mixture. This makes a nice big loaf. The chili sauce topping elevates this to the next level.
