  • Dark Jamaican gingerbread

      This gingerbread came out really dry (baking time seemed very long), especially on the second day, even though the author recommends baking the cake a day in advance. The bitter treacle taste was in fact quite nice (it's not a sweet cake, despite all that sugar going in), but the cake does need to be improved: maybe douse it in rum, or add some syrupy stem ginger pieces.
