      The flavor of these was good but because it doesn't have a filler the texture was more like a sausage than a meatball. Super simple to make.

      Simple, reliable. Flavor is good. Even the kids ate this. The zucchini did require draining and were still more "watery" with the pasta sauce than typical pasta.

      These are reliably good but do take time. It is best to make these several hours to a day in advance and the advantage is that they keep in the refrigerator. Letting the noodles sit, open, in the fridge for a few hours after draining but before using, or covering for longer storage, is important.

      Pg. 170. This was a nice way to serve spinach -- the pine nuts were a nice touch and the lemon added a good bit of brightness. It went well with some roasted lemon chicken. I'd make it again.
