      Nice - I read the recipe too quickly and did not realize this needed two layers, which is as good as this would have to have been more difficult to eat! Really tasty and going well together

  • Butter bean, cucumber & radish salad

      This is nice and pleasant, the flavors combine well together, and is pretty healthy …. not extraordinary though, just a nice little healthy salad. Plus, it made use of a few things I needed to use up! I changed the proportions a little : a third of a cucumber, 5/6 radishes, half a can of butter beans, and replaced mint and parsley by coriander. One thing though, I think a two cloves of garlic for a tablespoon of olive oil is a bit two much garlic! Divided by half.

  • Shin of beef with ginger, carrot & cabbage

      Possibly a wee bit faffy. I hadn't intended on straining the sauce (why remove all the vegetables?), but found the ginger a tad stringy, so finally did, which led to a last minute cooking of carrots when I realised I needed another vegetable side dish (didn't do the ones in the recipe). It went down well, but not sure I will make it again. It's not that it wasn't nice, just that I think there are simpler recipes out there which will give better results. Served it with a colcannon made with spring greens.
