    Shrimp avocado tostada: absolutely delicious! The combination of the sweet pomegranate, creamy avocado and spicy chilli and garlic shrimp was the perfect appetizer. Served it with Mexican beer.

      Delicious addition to the prawn and avocado tostadas, although I'd say the temp guidance is off - my cherry tomatoes starting to burn about halfway through the recommended cooking time at 190 (fan) - 160 would work better. Will make these again!

      This is a really fresh, summery delicately flavoured dish - we really enjoyed it. The reduced pomegranate juice is a revelation - divine! I tried two versions one with mayo and one with Greek yogurt and we much preferred the Greek yogurt version which is much healthier too! The confit tomatoes are wonderful little pops of intense flavour in amongst the lightness and brightness of the dish. Loved this with fresh tostadas from Mesitzo in Chelsea.
