    This is a really fresh, summery delicately flavoured dish - we really enjoyed it. The reduced pomegranate juice is a revelation - divine! I tried two versions one with mayo and one with Greek yogurt and we much preferred the Greek yogurt version which is much healthier too! The confit tomatoes are wonderful little pops of intense flavour in amongst the lightness and brightness of the dish. Loved this with fresh tostadas from Mesitzo in Chelsea.
