  • Courgette soup with Parmesan, ricotta and mint

      A nice courgette soup, ideal to use up a glut from the garden. The ricotta and stock flavour the soup quite nicely already, so I didn't think the parmesan was needed in addition. Also subbed rosemary for basil, as that's what I had on hand.
