      This was delicious and I used it to make sandwiches (like a fancy tuna salad). I was a little worried that the raw shallot would be too overpowering, so I caramelized it in a little butter. I chopped that up and mixed it in. I also forgot to add the lemon juice, but I'm glad I did. Not sure it needed it anyway.

  • Calvados applesauce

      Used about 3/4 Pink Pearl and 1/4 Winesap (heirloom apples from my trees). Was out of Calvados so I used Clear Creek Distillery Apple Brandy. Instead of just 1 tsp cinnamon, I added 1/2 tsp cinnamon, 1/4 tsp ground allspice, and 1/4 tsp freshly grated nutmeg. In the past I've pureed the applesauce, but I followed the directions here and mashed it with a potato masher and left it chunky. I don't really taste the brandy in the finished product, but it's good!
