  • Fish tacos with tomatillo-jalapeño salsa

      It turned out good. I did not feel like grilling so I just baked the fish in the oven while basting. Also since I was using swai not halibut did not want to dry out the fish. The other change I made was to add lemongrass, pomegranate vinegar, sesame oil in with the the tomatillos.

  • Escarole salad with red quinoa and hazelnuts

      The quinoa is crunchy, I would cook it a little more than the recipe calls for. Would probably be good with left over grains instead of cooking fresh and save time too. We did love this, the filberts and the dressing were wonderful.
