  • Rhubarb and spelt muffins

      These taste nice, though I must make double the quantity next time. I doubled by 1.5 and still only got 10 muffins out of it. Have made twice now and the muffins always rise up and then overflow in a funny way, creating some odd looking muffin tops, which doesn't really bother me but maybe isn't nice enough if baking for guests. The sugar can certainly be reduced by a quarter. Would make again with tweaks.
