  • Aleppo red lentil soup with verjuice [Aziz Hallaj]

      This recipe caught my attention because the Kurdish-Turkish red lentil soup I usually make uses water, lots of fresh herbs, and pepper paste. So this recipe is geographically close but taking a very difference route for its Middle Eastern flavor. I especially liked the use of verjuice to provide the sour taste but prefer the herbs to the spices for flavor. With either recipe, a bit of labneh on top is an excellent addition.

      The recipe is for 2-3 servings so decided to double it. The amount of spinach was probably too much. The recipe tasted bland so added a teaspoon of dried parsley, coriander leaves and marjoram each. Added lemon juice when serving and that seemed to do the trick. It's a good soup for flavour variations (e.g roast garlic might work)

Acclaimed chefs and cookbook authors the world over have come together to help food relief efforts to alleviate the suffering of Syrian refugees. Each has contributed a recipe to this beautifully illustrated cookbook of delicious soups from around the world. Contributors include: Yotam Ottolenghi, Sami Tamimi, Anthony Bourdain, Alice Waters, Paula Wolfert, Claudia Roden, Chef Greg Malouf, Chef Alexis Coquelet, Chef Chris Borunda, Chef Alexandra Stratou, Necibe Dogru, Aglaia Kremenzi, and many others.
