    Polish twelve-fruit compote (pg 139) is an absolute favorite Christmas season dish in our family. I have no set choice of twelve fruits but I tend to include dried berries not included in the recipe's list.

    Chestnut stuffing for turkey (pg. 149) - this recipe works well with any fowl but is especially appropriate for a Christmas turkey. I prefer to make it with oysters rather than pork sausage ... it just seems it bit more festive. For roasted chickens, I go with the pork sausage.
