    Horseradish jerky (pg 62) is one of many variations on beef jerky. This book convinced me that I could safely make jerky through its instructions on minimum temperatures to be safe and its throw-it-out instructions on mold. I enjoyed having the beef-horseradish flavor in jerky. Recommended.
