      A bit more healthy and just as satisfying as 'regular' bolognese. I love it. Easy to make, ideal for weeknights.

      Definitely a fiddle with the salting of the vegetables and then frying them but it makes a fabulous - and unusually not at all greasy - moussaka. Next time I probably will leave out the potatoes and use more aubergine. The potatoes were nice but not nice enough to bother with. I made a half quantity which was abundant for 3 people, and used gruyere because I couldn't get graviera.
