      This made for a really hearty and tasty vegan taco. The chickpeas and walnuts were filling, so even my meat-loving husband was satisfied. The chipotle was delicious with the sweet squash. I used frozen butternut squash cubes, and they needed an extra 10 minutes. (What a great ingredient if you need dinner on the table quickly.) I served with the avocado sauce suggested as an accompaniment, but I didn't care for the sauce.

      this goes down as an all-time favorite. I've made this more times than I can count. vegans and meat eaters alike love it. I serve with tortillas on the side, salsa, refried beans, and avocado.

      This is similar to how I personally cook tofu scramble. I generally don't use milk, and sometimes I spark it up with a hit of mustard powder or chipotle powder. It's always a hit.

      I've made this a few times. I had trouble keeping the soy curls from being too soggy no matter what I did. The flavor was good though.

      Everything I could want from tempeh bacon. I tried it both as strips and as cubes and both worked fine. This is one of those things I eat out of the bowl before I've finished the entire meal. I didn't use low-sodium soy sauce as suggested and found it a bit spicy, so next time I will eliminate the extra salt.

      This is my favorite salsa. It is exactly like the salsa at a certain taco truck in Austin that they are trying to emulate, and it's my favorite salsa in Austin.

      This chipotle sauce is amazing! I don’t remake very many recipes, but this is one that I almost always have in my fridge. Great on tacos (of course), burgers, in a salad dressing, on pasta… I’m basically obsessed.

      I found the recipe really overly sour, and the combination wasn't better on my tacos then sliced avocado, cilantro, and a squirt of lime would have been. Pass.

      Solid Texas-style barbecue sauce. I recommend adding heat, though. Either chili sauce, mustard powder, or similar.

      These were a beautiful bright pink. As far as pickled red onions go, they were very minimalist. Good if you have other competing flavors in the dish, but not real special on their own.

      This is composed of several sub recipes so if you made them all just to make a taco, it would take hours. I did it as a finale to a day of meal prepping. The corn makes twice as much as the potatoes so I would either halve one or double the other.

      It was fairly easy to make. I love tomatillos and was really look forward to this recipe. However, I didn't care for it and would not make it again. It wasn't nearly as flavorful as I expected it to be.
