  • Gingerbread cake with caramel biscuit icing

      Daughter-in-law had some biscoff paste she wanted to use up.. and I had some buttermilk .. did a recipe search and this was final selection. I only wanted a two layer cake, so proportioned ingredients accordingly. Made a very light sponge. But so much buttercream...However, it was deemed a success.. didn't do the gingerbread Christmas biscuit decoration.. just the coconut..

      This was a great cake and very popular with my family. I'd read that the full amount of icing was a bit too much, but half wasn't quite enough, so I'd make three quarters next time. I didn't have buttermilk, so used half yoghurt, half milk, which was fine. I'd slightly up the amount of spices, as it was a bit milder than I was expecting. The uniced cakes froze really well.
