      A note for anyone who is using jasmine rice instead of Arborio (St. Patrick’s Day is tomorrow, I’m Irish, and I need to bring something to work) :) — it takes a lot longer. I think covering it and cooking at 350 and then dropping to 325 so it gets to a boil would make it go faster, but I discovered that about 2 hours in.

      So delicious! Raves from everyone-served with berries on the side. Moist but crumbly. The only quibble is that my cake was not done in the center even after exceeding the maximum time suggested. It looked fine, but then sank as it cooled & turned out to be slightly too wet. Fortunately, enjoyment wasn't affected. Very easy to put together.
