  • Quinoa bean burger

      This is a pretty flexible recipe - I used kidney beans, wild rice instead of quinoa, no red pepper and I didn't bother blitzing the oats in the processor. I did process 2/3 of the mix though, as didn't have a masher. Pretty straightforward to make. Worked well in a bun with all the trimmings.

      As I'm a vegetarian I substituted the beef for fresh quorn mince (I used 1 full tray from the chill section of the supermarket) which worked very well. Only one thing I'd say is that it takes longer than the 20 mins baking to make sure the aubergine and potatoes are well cooked. This dish also reheats beautifully - if anything it's even better 2nd time around.
