      Sprinkling another 1/4 to 1/3 cup additional cilantro made a delicious difference! I had cucamelons growing in my garden, so I chopped 1/2 cup of them into this dish and they, too, were a great addition.

      Only OK. The vegetables didn’t absorb the dressing so this salad didn’t have much flavor. I needed a quick side dish for dinner so I was glad I tried this.
