      Didn't turn out well as written. 3.25 lbs of pumpkin (I subbed butternut squash) turned out to be way too much compared to the amount of broth called for, Even after adding more water it still turned out to be thicker than I expected for a soup; more like a chowder. Flavor was only OK.

      I substituted 1/2 cup of uncooked red lentils and it worked well.

      We liked this, though I would add some spices to the bean/pepper mix next time, think cumin, smoked paprika, chilli powder... And only use half the amount of beans in the mix. The tofu strips were great and worked well in our tacos. We had these with lots of extras for everyone to put in their tacos as they pleased and it was a great meal.

      This is a very tasty lentil stew with strong flavor profile. I used freshly ground whole spices. Very spicy as written so novices might want to tone down the spices, especially the cayenne.
