  • Brown-butter cod loin with leeks, spinach and grains

      This was a rather tasty and effortless dish, which we'll probably make again. I didn't make it totally true to the recipe as written, though. I didn't have any spinach in, so substituted that with frozen peas, which worked fine. And I didn't have ready made "wholegrain mustard mayonnaise", therefore I added mayo and wholegrain mustard in equal amounts - which came out a bit heavy-handed on the mayo. I'm not even sure it's needed, the mustard alone may suffice, but next time I'll definitely be careful with the amount of mayo going in. Lastly, I just (generously) dotted the fish with butter and baked it in the oven, instead of frying it in butter.
