    Kapusniak -- Polish sausage and cabbage soup (pg 102). Yes, I will admit that 5 minutes of microwave does not match the flavor of a soup simmered for hours and reheated the next day. But like most recipes in this book, it still succeeds in providing a satisfying soup.

    Pear, walnut, and blue cheese soup (pg 57) - this soup uses a bit pf potato to add more body, and stock as a base. This is an amazing soup considering that it takes about 10 minutes to throw together - just enough time to add a salad or sandwich for a full lunch.
