    2.5 stars for the Cheesy Mexican Casserole—The cheese sauce was thick so I added 2 Tbsp of water. I used a little over half the amount of tortillas because I was afraid it wouldn’t all fit in my 8x8 inch pan. I cut salt down to 1/2 tsp and only had about 1 3/4 cups of salsa, so that’s what I used. I’m glad I used less salt because it came out salty enough for my palate. The smaller quantity of salsa was fine too. But if I were to make this again, I wouldn’t thin out the sauce and I’d use the full amount of tortillas. There was just about enough room for them, and without them, as well as with the sauce thinned a bit, the dish came out soft and lost its shape when transferred from pan to plates. It tastes pretty good. Better on the second day, since the flavors have had time to marry), but I don’t think I’ll make it again because it took me a long time. I’m a slow cook, but it took at least two hours to make, and it’s listed as taking forty minutes. Ridiculous.

    3.5 stars for the Secret Ingredient Three-Bean Chili: We had less than half the bell pepper amount, and yellow, not red. We also had a little less the full amount of sweet potato. It still came out well. I added 3/4 tsp cinnamon because I really like cinnamon in chili. I think it added a lot. The use of mashed sweet potato as a thickener was great. I don’t taste it, but it thickened the chili well. Overall, this is a recipe we would make again. It was time-consuming (especially since my husband was the cook for most of it) but good.
