      Delicious! I pulverized my red lentils, and I cannot taste them. But to be fair, we are really heavy handed with the chocolate and maple syrup here. I questioned how many grams of chocolate chips I was dumping in, but my tastebuds sure don’t mind at all. I can’t speak on the baking time, because apparently my oven turned itself off at some point? Had to get creative and thus mine didn’t rise very much. Will definitely repeat and try again!

      Good. Second time making a recipe using Gochujang and I don’t think it’s for me but I’d make this again to use up the tub I bought. I served over brown rice.

      Easy weeknight winner! This was delicious. Made a few substitutions based off what I had on hand —> no poblano, used one Serrano pepper instead (I like heat!). No coconut milk, used soy. Worked just fine. Lastly I served it over leftover farro I had in the fridge. Will repeat!

      Daaannngggg! This is SO good! Recipe recommends using an 8x8. I only have a 9x9 and it was STUFFED. Husband has already requested we repeat this (he actually ate it for breakfast the following day lol). I think i would throw in some mushrooms too next round!

      Tasty and filling! I didn’t bother to peel my Yukon gold potatoes. I used a regular jalapeno I had in the fridge + a poblano I needed to use as well. I had a big bowl and still didn’t hit 20g of protein, but it was delicious nonetheless.

      This was on the bland side for me. I think I’ve had so many amazing wins from this book so far that I was waiting to be blown away. But so far I’ve yet to eat a vegan Mac and “cheese” recipe that’s wow’d me.

  • Sweet and sour tofu with ramen

      So good! I messed with this a little. I didn’t feel like making cashew butter so I subbed peanut butter. I air-fried my tofu. Lastly I added a lot more veggies - sugar snap peas, purple cabbage, mushrooms in addition to the peppers and broccoli. Repeater for sure!

      Wow! These were phenomenal. My husband made them while I was out snowboarding & they were the perfect cozy meal to have after a cold day outside. Served with the accompanying gravy recipe, some protein pasta, and shredded Brussels sprouts. Would absolutely repeat.

      Poblanos were at my discount grocery store this week so I picked this recipe. Stuffed poblanos are nothing new over here; I mainly wanted to try her vegan mozzarella recipe. Good! I used pintos from my pantry instead of black beans, but I think doubling up on a mix of beans would be great too.

      These are delicious! I was a little worried about the amount of tahini going in - my family isn’t always the biggest fan of it, but everyone agreed these are super tasty! Followed instructions exactly. Baked for 11 minutes. I’m not sure how big my cookie scoop is, but I ended up with 14 cookies.

      Good. To my tastes, this was pretty dang sweet, but my kids did not care for it. My husband devoured it. If I make it again i would like to try blackstrap molasses instead. I found myself wanting a glass of almond milk or maybe some soy yogurt to go on top? The consistency is more like a dense brownie than when I think of a cake. Easy enough to throw together! Loved the sweet potato in the microwave note. Worked perfectly & will definitely use going forward in other applications.

      Super easy & very similar to other recipes I’ve used. Main sub is using maple syrup in place of white sugar. Not sure why you would dirty a blender for this recipe? I just stirred mine together.

      Also extremely delicious! I’ve had full fat coconut milk in my freezer for, forever so we used that rather than going out and buying light coconut milk. Next time I make this i would like to experiment with some homemade cashew milk and see how that goes!

  • The best vegan mozzarella cheese ever

      I was pleasantly surprised by this. I don’t think anyone who’s eaten actual mozzarella would confuse this as such, but I do think it tastes good! It was 1,000x’s better than the “pourable mozzarella” recipe I tried from a different cookbook. Will repeat!
