    Broccoli katsu curry: I'd been looking for a veggie katsu curry for a while and this one didn't disappoint. I used a combination of normal broccoli and cauliflower as I had some to use up, rather than the Tenderstem in the recipe. The breadcrumbs didn't stick to the veg as much as in a chicken version: that might be explained by the my veg swap and the fact I was rushing and didn't dry it properly, but you can also see from the pictures that the crumb coating isn't as even as in a normal katsu. It was still delicious though, and the fact it's baked rather than fried makes it feel quite virtuous. You get that distinctive hit of katsu deliciousness without the cloying sweetness that can spoil some sauces, and with much less effort than the traditional version.
