    Rhubarb spritz (pg 54) is a cocktail of sparkling wine, gin, Aperol, rhubarb syrup (homemade), and grapefruit juice. Aperol bitters includes rhubarb making it a perfect bitters foil. Unfortunately, many people are on medications that prohibit grapefruit so don't serve without letting guests know the ingredients.
