      These are basically a combo of my two favorite cookies: oatmeal raisin and ginger molasses. I would make these again but leave them in the oven a little longer as they were a tad underbaked.

      I've never tasted lumberjack cake prior to making this, but this was delicious. It tasted like a sticky toffee pudding cake with added apples and coconut. The cake was fully baked at 45 minutes in my oven rather than the 1 hour specified in the recipe, so I would keep an eye on it next time.
