  • Pumpkin cake with browned butter streusel

      Excellent pumpkin cake; love the pumpkin seed streusel. I brought it to work. My coworker (who dislikes the texture of pumpkin pie) loved this pumpkin cake, and asked for the recipe. (Also posted on the book version Bake from Scratch, v. 1 and the Bake from Scratch magazine (Fall 2016).

  • Chai spice caramel pie

      The flavor was phenomenal, and it looked super pretty with the meringue. However, the instructions needed to be more clear about when to make the caramel. I made it after the custard was cooked, so the caramel was very hot and the custard had cooled down. The caramel crystallized upon contact, getting chunky pieces in the filling. So without the caramel fully incorporated, the filling never set up. It was definitely like a pudding. I would try it again, as the flavor was very good, but it was disappointing.

      Wow--I really don't like meringue as I find it to be too sweet. But, with this having more salt, it was delicious!

  • Butterscotch cake with salted caramel buttercream

      This turned out really well. My only complaint was that the cake sunk in the center. The frosting was not too sweet, which went really well with the caramel sauce. The cake texture was decent, but not the next I've ever had. However, the butterscotch flavor was really good.

      We did not like this. It tasted like Thanksgiving stuffing. The bread was just odd. Definitely won't make again.
