    Brinjal rice (with vangi bath powder) (pg 42) When I finally found a source for multiple varieties of South Asian rice and millet, I had to seek out recipes using them; this recipe uses sona masoori rice - a medium grain rice that is considered premium for export. The spice mixture is gram and coconut based using 13 ingredients; you can buy premixed spices. Pay attention to the author's note and use a variety of eggplants. Eggplants over rice was my favorite Indian restaurant dish -- until the cook retired. This recipe is as close as I have come to the original cook's recipe.
