      This is one of several versions of this recipe. The quick marinade and soaking of the rice noodles makes this an all round great weeknight dish. With the dill and cilantro it is colorful, flavorful, healthy and can be a one dish meal (not counting soaking noodles).

      While I did have to add more seasoning to this than specified (sugar, salt, and butter - the last of which could probably have been avoided by using a richer coconut cream instead of milk) the end result was delicious. The spice mix is hearty and toasty and we both enjoyed it a lot. I'm not very familiar with Sri Lankan food but it's one of the areas I'll definitely be exploring more!
