    Pumpernickel bread (pg 23) is clearly not a traditional recipe as it contains vital wheat gluten, instant coffee, cocoa powder . . . On the other hand, it can be made in a day. The dough is rather difficult to work with as it does not meet your expectations of a standard bread dough. However, this does make a very tasty loaf that is worth the effort of baking it.
