    Sweet sot-braised eggplant (pg 58). Wonderful. As suggested, this is great the next day cold. It is very easy to cook the thin Japanese eggplants to mush. Use the least amount of water necessary to control the amount of time they braise.

    Stir-fried Napa cabbage with ginger (pg 62). Simple and delicious. Very easy to downsize to serve just one.
