  • Easy chorizo chilaquiles

      I’ve never seen or tried Chilaquiles but Chris Kimball mentioned them on his podcast and I searched for them. Recipe sounded liked it’d be a disaster but my family loved them! I used chorizo, but would like to try Barbacoa next time. Couldn’t find the salsa they recommended and had good results with Xochitl medium salsa. Mexican crema was good, but next time I’ll just go with sour cream, maybe thinned with a little lime juice. Easy, crowd pleasing dinner!

      Got a request for French bread pizza and we loved this, with the exception that the sauce was too sweet. Will adjust next time. We made the pepperoni, but will try other 2 variations as well. Fun dinner!

  • One-pan turkey meatballs with coconut rice

      Have made this several times. This is very flavorful and pleased every family member. No leftovers.

  • Chicken noodle casserole for two

      Chicken, noodles, cheddar, and peas in a casserole dish, topped with panko, for 2. Deliciously creamy & indulgent, but cut back on the half-and-half next time.

  • Slow-cooker adobo-braised beef

      HUGE hit. Did not have the dried pasillas so substituted a variety of small dried peppers I had. Served with corn tortillas (flour called for) and pickled radishes.
