    Chicken Piccata Sauce was super lemony and herby and there is plenty left to put on bites of mashed potato or dip your bread in. So delicious I want to put it in a regular rotation!

      The chicken was moist and tender while the sauce was velvety and perfectly seasoned. Minced onions were a good substitute for the pearl onions. The entire dish tasted delicious. A great meal on a cold night.

      This was a big hit. Used left over ham and pork tenderloin, instead of roast pork shoulder, along with yellow mustard instead of Dijon to make the sandwiches. Next time I would brush melted butter on the outside of the rolls rather than using softened butter as there was too much butter in the panini press and the butter solids got darker than I would have liked. This was a quick and easy meal that was a great way to use up leftovers.
