  • Rissoles of salmon

      Loved the idea of this dish and just adjusted it slightly. Instead of rounds I cut the puff pastry and salmon into rectangles. As is I thought the recipe sounded a tad boring, so made a little mix of Dijon mustard, creme fraiche and dill to slather on the salmon before encasing in puff. Still added the knob of butter. Very tasty! Used the bread crumbs on top, but they seemed pointless when the puff pastry yielded a shattering, crunchy texture on its own. Very easy. Love the idea of this for a starter for a fancy dinner.

      Love the crunch, but it does taste like apples and celery in mayonnaise… Not bad, but also not crave worthy.
