  • Acai breakfast bowl

      Really nice template for an acai breakfast bowl. I like the idea of blending little banana and mixed berries into the acai to make it less tart. I used 2 packets of Trader Joe's acai puree and it was enough for 3 people. Topped with granola, chia seeds and fruit.

  • The street corn wedge salad

      The dressing makes this fairly simple salad super delicious. The extra step of sauteeing the corn could be skipped with really fresh corn. Skipped the bacon and didn't miss it.

  • Swedish-style chicken meatballs

      At one point I tried numerous swedish meatball recipes but gave up after a few misses. This particular recipe is just the way I like them: tender chicken meatballs and plenty of sauce. It is a project though, it took me forever to make all those little meatballs, and the gravy recipe was time consuming as well. Thankfully I skipped the cranberry sauce (no fresh cranberries to be found this time of year) and served ligonberry sauce on the side. I would make again if I felt like serving these to company, but as written too much work for just us.
