Notes about Recipes in this book

  • Christmas pudding Eccles cakes

    • FJT on January 09, 2021

Made this as I had leftover Christmas pudding and a sheet of gluten free puff pastry. The flavours were good but the marzipan cubes didn’t add much and could easily have been left out, plus they made stretching the pastry round the filling more difficult. I ended up with a lot of leftover filling because I didn’t have a cutter the right size and had to cut smaller pastry circles. This threw the ratio of pastry to filling off for each Eccles cake. Overall not a great success, although they did disappear quickly!

  • Pork with juniper and porcini

    • FJT on January 11, 2021

This made a really nice pork stew which I will definitely repeat. I cut the pork into larger pieces than stated and cooked it on a very low heat for nearer 4 hours; next time I will probably pop it on the oven rather than making it on the stove.
