      Fish sauce lent this a funky note that was not appreciated by my 6yo. Could probably replace with soy sauce if necessary.

      Good muffins! This recipe makes eight large muffins. I baked them for 27 minutes. Very nice texture. I suspect that the amount of sugar is increased to counteract the whole grain. I think my favorite blueberry muffin is still the one from Midwest Made

      This was fine. The tofu didn't take the marinade as well as I wish it did, but the brussels sprouts were delightful.

      I was a bit hesitant to make this, as I thought it was going to be overly mushroomy. Luckily it wasn't and I was pleasantly surprised by the results in general. Will definitely be making this again.

      We really enjoyed this one, but anytime a recipe has chicken roasting over a potato/yam I am all in favor of it. Great flavor here. Don't over stack the potatoes though as you want to make sure the juice from the chicken gets on all of them.

      This was a nice vegetarian recipe. The hot sauce I used was very spicy, so the avocado was a nice accompaniment. We both liked the spices/sauce on the tofu. I would make this again.
