      This was absolutely delicious and well worth making. It had a great, well rounded flavor and was moist and flavorful.

      This was a very nice rice salad. We had never tried mung beans so we decided to experiment. Hard to find mango pickles so I used brine from cornichons and cut up a few of them into the salad which was surprisingly good. I thought it needed a brighter crunch so we threw in some pomegranate seeds—a great addition!
